Pickles | Things I’ve Been Doing Since I Left My Desk Job

I’ve already had one full week away from my desk job and the reality of my new schedule is finally setting in. I have TIME! Time to clean my house everyday; time to walk around the lake and go to yoga every day; time to read; time to write; time to clean out my closet and eliminate half of my useless wardrobe; time to meet with potential clients; time to take pictures just for fun; time to snuggle with my husband in the hammock and time for special projects like…pickling!

We got a huge case of cucumbers from a farm just north of us in La Connor with the plan to make Deli Dills and two kinds of Bread & Butters. First we cleaned them up and iced them over night.

Then we prepared the Bread & Butters by slicing, salting and adding onions:

We cooked it all up with lots of vinegar and other spices. A few of the batches we made with fresh hot peppers from our garden:

Our house was smelling really interesting at this point of game. Steamy vinegar and onion smells permeated the air. Even with all the windows and doors open we could not escape the smells. I was afraid we’d stink of this adventure for weeks!

Meanwhile, outside we had a couple of crocks ready for the Deli Dills. We added our custom spice mix, fresh dil, a few hot peppers, and some garlic. They get to soak for a few weeks but we’ve been sampling them ever since. It’s exciting to taste the flavor changes and anticipate the final results. I think they’re going to be a big hit!

In other news, I’ve started a new photo-book project and nearly finalized a line of holiday/greeting cards to offer clients this year. But perhaps the most exciting thing is the redesign of this blog! If you’re viewing this in a feed reader you’re missing out. Stop over to take a look and tell me what you think! And this pickle post is gorgeous. It’s so beautiful I want to make pickles!! The power of a photography. I popped over from my reader because I had no choice if I wanted to read the post. I’d love to continue reading the full posts in my reader, I promise I’ll continue to comment but clicking on titles to read the full post is kind of a pain and I don’t always do it. But pickles… now that sounded interesting.

We sampled some of the dill’s yesterday when my nephews were over. They devoured the first one and begged for seconds! Mmmmm, crisp juicy pickles and pickle juice covered nephews in the hammock. Awesome.
